What is tomatoes, stewed, canned?

Stewed canned tomatoes are whole or large-cut tomatoes that have been cooked down in the can with seasonings already mixed in. Most brands add a little sugar and salt along with bits of onion, celery, and green pepper.

That built-in seasoning is what sets them apart from plain canned tomatoes.

The cooking leaves them soft and a little jammy, swimming in a thicker, sweeter liquid than diced or whole tomatoes pack. They are meant to be a near-finished base, not a blank canvas.

How to Use Them

Pour the whole can in, juice included, near the start of a simmered dish and break the tomatoes up with a spoon as they soften further. They melt readily into soups, stews, skillet dinners, and Creole or Mexican braises like Orange Roughy Veracruz and Tuna & Rice Creole.

Because they hold together less than diced tomatoes, they suit dishes where you want the tomato to dissolve into the sauce, as in Hamburger Stew or Possee Stew.

The common mistake is double-seasoning. Stewed tomatoes already carry sugar and salt, so taste before adding either; many a chili has come out cloying because the cook salted on autopilot.

Stewed Versus Diced and Whole

Diced tomatoes are firmer and unseasoned, with calcium chloride added so the cubes stay distinct even after long cooking. Reach for diced when you want visible chunks.

Whole peeled tomatoes are the most neutral and best when you plan to crush them yourself and control the seasoning.

Stewed tomatoes sit at the opposite end: softest and sweetest of the three, and already flavored.

Substitutes

Crushed tomatoes work when you want a smoother result, though you lose the soft chunks. In a pinch, plain tomato sauce thinned with a little water covers a saucy dish but brings no texture at all.

Buying and Storing

Standard cans run 14.5 ounces (about 411 grams). Italian or Mexican style varieties push the seasoning herby or spicy. Skip any can with bulging or dents along the seams.

An unopened can keeps in the pantry for at least a year. Once opened, transfer any leftovers to a covered container, never leaving them in the can, and refrigerate for up to five days. They also freeze well for several months.
