What are red chili peppers?

Red chili peppers are simply chiles that have stayed on the plant until they ripen. Almost every chile turns red (or orange, or deep maroon) when fully mature.

That ripening changes the flavor. The grassy bite of the green stage gives way to something fruitier and rounder, even as the heat often climbs.

Used fresh, they bring color and a warm, mellow burn. Dried, they become the backbone of chili powders and the chile pastes behind countless cuisines.

Pairing and Common Mistakes

The common mistake with dried chiles is scorching them. Push past lightly toasted into burnt and the whole batch turns acrid and bitter, with no way back. Keep the heat moderate and pull them the second they smell nutty.

With fresh red chiles, the slip is assuming red means hotter than green. Ripening builds sweetness and sometimes heat, but a sweet ripe bell is red too. Identify the variety, not just the color.

What to Swap In

For fresh red chiles, a red jalapeño pepper, red serrano chiles, or a cayenne pepper pod match the color and bring graduated heat. A green chile works in a pinch but loses the fruity sweetness.

For dried red chiles, red pepper flakes or a measured spoon of cayenne cover the heat, while ground chili powder stands in where a blended paste is wanted. Adjust down, since dried and ground forms concentrate the burn.

Buying and Storing

Choose fresh red chiles that are firm and glossy with tight, unbroken skin. Soft spots and wrinkles mean they are past their best and will not hold up in cooking.

Stored loose in the crisper drawer, fresh red chiles keep one to two weeks. Because they are riper than green ones, they spoil a little faster, so use them sooner.

Dried red chiles are the easy keepers. Sealed in an airtight container away from heat and light, whole dried pods stay usable for a year or more, slowly losing potency rather than spoiling.

Buy them glossy and still slightly bendable; a chile that snaps like a twig is old and has lost most of its aroma.
