More of a stew than a soup as the broth is absorbed and thickened by the soba noodles. Very hearty and loaded with goodies. The flavorful broth covers all of the ingredients more like a sauce.

Directions

Heat oil in a large nonstick skillet over medium-high heat.

Add garlic, ginger, and lemongrass if using; sauté 3 minutes.

Add water and broth; bring to a boil.

Add chicken and broccoli ; cook 5 minutes or until chicken is done.

Remove from heat; stir in remaining ingredients.

Let stand 5 minutes. Discard lemongrass if using.

Note: You can add broccoli, mushrooms, any your favourite veggies at the end of the cooking for a more hearty soup.
