The single rule that fixes most chicken breast is even thickness. A raw breast tapers from a thick lobe to a thin tail, so the tail overcooks while the center catches up.
Pound it to an even ½ inch (about 1.3 cm) between two sheets of plastic, or butterfly a thick one before it ever hits the heat.
Cook to an internal temperature of 165°F (74°C) measured at the thickest point, which is the safe figure from the USDA. You can pull boneless breasts at 160°F (71°C) and let carryover heat finish them during a rest, which keeps them noticeably moister.
That rest matters. Give the meat 5 minutes off the heat before slicing so the juices redistribute instead of running onto the board. Slice against the grain for tender bites.
The classic mistake is cooking on heat that is too high for too long, chasing color while the inside passes 170°F (77°C) and squeezes out its water. Sear hard for color, then drop the heat or move to a low oven to coast to temp.

Turkey breast behaves almost identically, leaner and a touch firmer, and works in cutlets and sandwiches. Pork loin or tenderloin gives you the same lean, mild canvas for many marinades.
For a meatless stand-in, firm or extra-firm tofu and seitan take the same seasonings and griddle or stir-fry in the breast's place, though they bring none of its texture.
Choose breasts that look plump and pink, with no gray cast and little liquid pooled in the tray. Air-chilled chicken, if your store carries it, browns better because it is not waterlogged.
Watch the package weight too. Many breasts now run over half a pound each and cook unevenly unless you split or pound them down first.
Keep raw breasts on the coldest shelf, usually the bottom, on a plate so nothing drips, and use them within 1 to 2 days. To freeze, wrap each piece tightly to block air and freezer burn; they keep about 9 months at 0°F (-18°C) but are best within 3.
