The classic 1890s Waldorf gets a serious glow-up for anyone who wants lunch that actually fills them up.

By swapping the traditional walnuts and grapes for crunchy cucumber, sweet raisins, and diced chicken breast, this becomes a complete meal instead of just a side salad. The light mayo dressing keeps things creamy without drowning the fresh ingredients.

That signature apple crunch is still front and center, and the lemon juice keeps everything bright and prevents browning. Pile it onto crisp romaine and you’ve got a lunch that’s ready in 20 minutes flat.

Variations

  • Go classic: Swap cucumber for 1 cup halved red grapes and add ½ cup chopped toasted walnuts for the original Waldorf experience

Directions

  1. core and chop the apples - stir in lemon juice
  2. add chopped chicken
  3. add chopped cucumber and onions
  4. add raisins
  5. add mayonnaise and stir until all ingredients are well combined
  6. season to taste with pepper
  7. top a bed of chopped lettuce with a couple of spoonfuls of chicken mixture
