West Coast Turkey Chili
A very simple and hearty turkey chili recipe from the west coast. Even better the next day and an excellent way to use up leftover turkey.
green bell peppers
kidney beans, canned
drained and rinsed, one large can
tomatoes, stewed, canned
cooked, cut in 1/2 inch cubes or substitute cooked chicken meat
optional, ideally freshly crushed
red pepper flakes
hot, crushed, optional or vary amount as desired
Heat the vegetable oil in a heavy bottom saucepan, over medium-high heat. Add the onions, green bell pepper, and garlic and sauté for about 5 minutes or until onions are translucent and green bell pepper is tender-crisp.
Add the kidney beans, tomatoes, wine, turkey, chili powder, cilantro, red pepper, cumin (optional), and salt.
Increase the heat, and bring the mixture to the boil; reduce heat to low and simmer, uncovered, for 25 minutes.
To serve, garnish with fresh cilantro if desired.
