85 minThis is the kind of dump-and-bake chicken dinner that earns its place in busy kitchens. Boneless chicken breasts get tucked under a layer of seasoned canned tomatoes, sliced mushrooms, and onion rings, then sealed with foil and slow-baked until tender. The foil cover is the trick that turns a quick-cook cut into something stew-like and saucy.
Using canned stewed tomatoes (rather than crushed or whole) is what gives this dish its character. They’re already pre-seasoned with onion, celery, and bell pepper bits, plus they break down into a chunky sauce as the chicken cooks. It’s a built-in flavor shortcut that fresh tomatoes can’t replicate in this short cook time.
The mozzarella goes on at the end for a reason. Cheese melted into the sauce muddles the dish; a fresh shower added in the last few minutes melts cleanly and stays distinct.
Pro Tips
- Pound the chicken breasts to an even thickness before baking. Uneven cuts mean some pieces dry out while others stay raw.
- Drain canned mushrooms thoroughly. The liquid waters down the sauce and dilutes the Italian seasoning.
- Don’t peek under the foil during the bake. Steam loss extends the cooking time and dries out the chicken.
- Use fat-free or part-skim mozzarella for a lighter dish, but full-fat melts more smoothly. Pick based on priorities.
Variations
- Swap canned stewed tomatoes for marinara sauce and add 2 tablespoons of capers for a chicken cacciatore-style version.
- Serve over pasta, polenta, or buttered egg noodles to soak up the saucy juices.
- Add 1 cup chopped bell peppers and 2 tablespoons fresh basil for color and a brighter Italian flavor.
