What is yogurt, non-fat?

Non-fat yogurt is yogurt made from skim milk, with essentially all the milkfat removed. You get the same tang and live cultures as regular yogurt, just leaner and thinner on the spoon.

It is the most fragile yogurt in the kitchen. With no fat to buffer the proteins, non-fat curdles fastest of any style when it meets heat, so keep it for cold work.

Where it works and where it doesn't

Non-fat is fine raw and chilled: breakfast bowls, smoothies, dressings, and a cool raita like Mint & Cucumber Raita. It also bakes well, where moisture matters more than richness, as in Moist Rhubarb Coffeecake.

Stirring it into a hot sauce or curry is asking for grainy curds. If a warm dish calls for yogurt, reach for whole-milk or Greek instead, or temper the non-fat and add it off the heat.
