When I have leftover rice, fried rice is always the way to go. Meanwhile It helps me use up whatever day-old veggies I have on hand, such as this fried rice with broccoli and egg. Quick, easy and tasty. Instead of making a scrambled eggs, this time I made an egg cake, then sliced it into strips. Or you can simply fry an egg, then place it on top just before serving.
