25 minThis is French toast that won’t blow your points budget. Reduced-calorie bread soaks up egg substitute, then cooks golden in a nonstick skillet with just cooking spray (no butter needed). You’ll caramelize banana slices in the same pan for a sweet topping that tastes way more indulgent than it is.
The vanilla yogurt sauce (sweetened with sugar substitute) adds creamy richness without the calories of syrup alone. A drizzle of reduced-calorie maple syrup finishes it off.
Two servings, ready in 25 minutes, perfect for a weekend breakfast that feels special but keeps you on track.
Pro Tips
- Use liquid egg substitute straight from the carton (easier to work with than whole eggs for this recipe)
- Dip bread quickly on both sides, making sure all the egg substitute gets absorbed
- Cook banana slices briefly (30-60 seconds per side) just until golden, not mushy
- Make the yogurt topping first so it’s ready when the hot French toast comes off the skillet
- Warm the syrup slightly for better drizzling over the finished dish
Ingredients
Directions
In small bowl, whisk together yogurt, vanilla, and sugar substitute. Set aside.
Pour egg substitute into shallow bowl; dip bread in egg substitute, coating both sides and absorbing all liquid.
Spray large nonstick skillet with nonstick cooking spray; over medium heat, cook bread until browned on both sides. Remove to heated platter, cover, and keep warm. In same skillet, quickly cook banana slices until golden on each side.
Place 2 slices bread on each serving plate; top evenly with yogurt mixture, banana slices, and syrup.
