These bran muffins skip the brown sugar, molasses, and oil that load most bran recipes with calories. Instead, unsweetened apple juice and a generous cup of raisins carry all the sweetness, while non-fat yogurt provides the moisture and tenderness that fat usually delivers.

The combination of whole wheat flour and unprocessed bran is the high-fiber backbone. Whole wheat gives the muffin structure and earthy flavor while raw wheat bran adds the coarse, nutty bite and fiber boost that defines a real bran muffin. Skip the bran and you have a generic whole wheat muffin.

Directions
