or margarine, melted

fresh, coarsely chopped

TEASPOONS ML ALL-PURPOSE FLOUR

Directions

In medium bowl, combine 1 ¾ cups of flour, ¼ cup sugar, the baking powder, baking soda and salt.

In small bowl, combine egg, milk, applesauce and butter, mix well.

Add egg mixture to flour mixture, stirring just until moistened.

Batter will be lumpy.

In small bowl, toss cranberries with 2 tablespoons flour, fold into batter.

Spoon batter into 12 greased 2½ inch muffin cups.

In another small bowl, combine ¼ cup sugar and the cinnamon.

Sprinkle over muffins.

Bake in preheated 400 oven 20 to 25 minutes or until wooden pick inserted in center comes out clean.

Remove from pan; cool on wire rack.

loving this recipe with less oil because of the applesauce, have you tried oat bran in it?

I haven't tried to add oat bran here. I did make a few oat bran muffin recipes, some had blueberries added, some used bananas, and they all turned out great. I believe if you substitute 1/2 cup flour to bran, the muffins should be still tasty :)
