40 minMeal prep meets snack time. These bars are the answer to every hectic weekday morning when you need something real to eat but have zero minutes to spare.
Oats, flour, brown sugar, and cinnamon form the base, while orange juice adds moisture and a citrusy brightness you don’t expect. Chunks of dried fruit give chewy pops of sweetness throughout, and a sprinkle of oats on top adds just enough crunch.
Bake a batch on Sunday, stash them in the freezer, and microwave one for 30 seconds whenever you need breakfast on the move.
Pro Tips
- Let the bars cool completely in the pan before cutting. They’re fragile when warm and will crumble if you rush it.
- Pack the batter firmly into the pan for dense, sturdy bars that hold together.
- Wrap individual bars in plastic wrap before freezing so you can grab just one at a time.
Variations
- Swap dried mixed fruit for dried pineapple, cranberries, or chopped apricots.
- Add a handful of mini chocolate chips for a kid-friendly version.
- Use apple juice instead of orange juice for a milder, sweeter flavor.
Ingredients
Directions
Combine 1½ cups oats, flour, sugar, cinnamon, soda and salt.
Combine juice, oil, egg and vanilla and add to dry ingredients.
Mix well.
Stir in fruit.
Spread into a 13×9 inch pan that has been sprayed with no- stick cooking spray.
Sprinkle with remaining oats. Bake at 375 for 20 to 22 minutes or until lightly browned and edges pull away from sides of pan.
Cool completely.
Cut into bars. Store tightly covered. (Bars may also be frozen in individual bags.)
Thaw at room temperature or microwave on high for 30 seconds per bar.
Note: I have used dried pineapple in place of the dried mixed fruit for a variation.
