1 - Cut fish into bites, sprinkle some salt, and set aside for about 20 minutes. 2 - Start cooking rice or noodles. 3 - Prepare shrimps, then rinse them under cold water, and drain. 4 - Prepare shrimp stock. Take a small pot and toss shrimp’s shells, heads. and tails, pour in 150 ml of water. Simmer for 15 minutes, then strain this liquid to a larger pot. Shrimp’s items are not needed any longer. Shrimp stock is ready. 5 - Add orange juice to the shrimp stock, then lemon juice, ginger, pepperoni, sugar, a pinch of salt, and simmer for about 2 minutes. Orange sauce is ready. 6 - Find a wok. If positive, sauté onion, green bean, and broccoli for 3 minutes. You may sprinkle some salt. Add fish, sauté for 2 minutes. Add shrimp, sauté for 1 minute. Pour in the orange sauce. Add thickener, it means cornstarch with water. Sprinkle some pepper. Stir and fry about 1 minute. 7 - Serve over rice or noodles.
