Low-fat Dutch apple cake spreads a thin, biscuit-like batter under overlapping cinnamon-sugar apples. Egg whites and skim milk keep it light, more fruit than cake in every slice.

50 minThis is barely a cake and more of an apple tart that won’t wreck your day. The batter is built lean: low-fat margarine cut into the flour like pastry, then bound with egg whites and skim milk instead of whole eggs and butter.
It comes together stiff, almost like a biscuit dough, which is exactly right since you spread just a thin layer across the pan and let the apples do the talking. Overlap the slices in two concentric circles so they fan across the top, then shower them with cinnamon sugar.
As it bakes, the apples soften and slump into the batter while the sugar caramelizes at the edges. A few dots of margarine on top help it brown. Ten minutes of cooling lets it set so it slices cleanly instead of crumbling.

Preheat oven 375℉ (190℃).
Grease and flour a 9 inch tart or pie pan.
In a mixing bowl, combine flour, 2 tablespoon sugar and baking powder.
With a pastry blender or 2 knives, cut in 1½ tablespoon margarine.
Add egg whites, milk and vanilla; beat until smooth.
Batter will be stiff. Spoon into prepared pan and spread batter to fit pan.
Arrange apple slices, overlapping, in 2 concentric circles to cover batter.
In a small bowl, combine 3 tablespoon sugar and cinnamon; sprinkle over apple slices.
Dot with ½ tablespoon margarine. Bake 30 min.
Cool 10 min before serving.
