Preheat oven 200°C (395 degrees F), line muffin pans with paper cases or grease them.
Melt butter in nonstick skillet over medium heat.
Add mushrooms, onions, sugar and salt, stirring often, and cook until most of the moisture has evaporated and the onions start to caramelize, about 10 minutes.
Meanwhile mix eggs, oil, milk, cheddar cheese, parsley, thyme and ¼ teaspoon salt in a bowl.
In another bowl, mix together flour, walnuts and baking powder.
When mushrooms and onions are cooked, let cool for a few minutes to make sure it’s not hot.
Add into the milk-cheese mixture, and mix well.
Pour the liquid mixture into the flour mixture, and stir until just combined.
Place in prepared pans and bake 15 to 20 minutes or until a wooden stick inserted in the center comes out clean.
Remove from pans immediately and let them cool on a rack.
Makes 12 muffins.
