What is milk, 2%?

Cooking and Baking With 2% Milk

For a dairy-free route, soy milk is the strongest stand-in because its protein cooks like milk. In a pinch you can stretch whole milk toward 2% by cutting it with a splash of water, or push 2% toward whole with a little melted butter.

Buying and Storing 2% Milk

Read the carton face, since 2% and 1% look nearly identical and live side by side in the case. Reach to the back for the freshest sell-by date.

Store it cold at or below 40°F (4°C) on a fridge shelf, not in the door where warm air sneaks in each time you open it. Opened and kept cold, it usually stays good around five to seven days past the printed date.

Smell is the real test. A sour odor or any lumpy, curdled texture means it has soured and should be poured out.
