Directions

  1. Prep: carrots, raisins, sunflower seeds, nuts
  2. In huge bowl, mix: oats, 2 cups shredded coconut, flour, flax seeds, cocoa, cinnamon, allspice, cloves, ginger, baking soda, salt
  3. In large bowl, mix: oil, 1½ cups honey, applesauce, pineapple, sour cream, yogurt, eggs
  4. Add wet mixture to dry.
  5. Add prepped ingredients.
  6. Form thick-edged layer in 16×2 dark pan.
  7. Bake 90 minutes at 300.
  8. Cool.
  9. Blend: cream cheese, butter, 1 cup shredded coconut, ½ cup honey, orange juice, lime juice
  10. Frost.
