Directions
- Prep: carrots, raisins, sunflower seeds, nuts
- In huge bowl, mix: oats, 2 cups shredded coconut, flour, flax seeds, cocoa, cinnamon, allspice, cloves, ginger, baking soda, salt
- In large bowl, mix: oil, 1½ cups honey, applesauce, pineapple, sour cream, yogurt, eggs
- Add wet mixture to dry.
- Add prepped ingredients.
- Form thick-edged layer in 16x2 dark pan.
- Bake 90 minutes at 300.
- Cool.
- Blend: cream cheese, butter, 1 cup shredded coconut, ½ cup honey, orange juice, lime juice
- Frost.
