Ingredients

12 ounces tofu
drained
½ cup brown rice
cooked
1 x green bell peppers
half of, chopped

¼ cup ketchup
½ teaspoon salt
½ package taco seasoning mix

6 each corn tortillas (6-inch)

½ cup tomatoes
chopped
½ cup onions
chopped
1 ½ cups lettuce
shredded

Directions

Combine tofu, rice, green pepper, ketchup, salt and taco seasoning, mixing throughly.

Heat skilet and warm tortillas until soft and pliable.

Fill each tortilla with tofu mixture and garnish with tomato, onion and shredded lettuce.

Season with hot sauce if desired.
