This tasty curried tofu salad can be used in many ways, as a filling of whole wheat pita, or you can just spread them on top of the toasted bread.

Ingredients

3 tablespoons yogurt, low-fat
plain
2 tablespoons mayonnaise, fat free
2 tablespoons mango chutney
prepared

2 teaspoons curry powder
¼ teaspoon salt
black pepper
freshly ground to taste

14 ounces tofu
1 package, extra-firm water-packed, drained, rinsed and finely crumbled
2 stalks celery
diced

1 cup red grapes
sliced in half

½ cup scallions, spring or green onions
sliced
¼ cup walnuts
chopped

Directions

Whisk yogurt, mayonnaise, chutney, curry powder, salt and pepper in a large bowl.

Stir in tofu, celery, grapes, scallions and walnuts.
