French Baguette Mix recipe for bread machine

When using any other flour but white, substitute one tablespoon of gluten flour* for regular flour. You can use mixed grains, bran, flax, whole wheat flour, rye flour. Just be sure to adjust the gluten. 100% whole wheat does not turn out too well.

Directions

When using any other flour but white, substitute one tablespoon of gluten flour* for regular flour. You can use mixed grains, bran, flax, whole wheat flour, rye flour.

Just be sure to adjust the gluten. 100% whole wheat does not turn out too well.

Use a maximum of ¾ cup of heavy grains such as Red River Cereal.

It will simplify your life immensely if you make several bags of this in ziplocks.

Spray your 18" baguette pan with cooking spray. Use the dough cycle of your bread machine.

Put 1½ cups warm water, your flour/salt mixture and 2¼ teaspoon of quick rise yeast.

When the dough is ready split the dough into two.

Roll on a floured board with your hand to form a long sausage shape 2" shorter than your bread pan.

Flour the top of the loaves and then make diagonal cuts on the top with a sharp knife about ½ inch deep, at 1" intervals.

You can put the bread to rise in the oven with the light on.

The light provides just enough heat. Bake at 375 for about 35 minutes.

If you have a delayed/times bread cycle - this simplifies the task enormously.

Put bread in, choose 375 degrees, 38 minutes, end at time in 1½ hours.

You don't have to handle it again until the timer rings.
