Super Carrot Raisin Salad

 

This super carrot raisin salad is very good for dinner, very light and tasty, but you had better finish it at one meal, don't let it overnight, will be not fresh.

Ingredients

3 medium carrots
peeled and shredded
½ cup raisins, seedless
½ cup pineapple
chopped fresh or canned

½ tablespoon cilantro
chopped

For the dressing:
2 tablespoons coconut milk
canned
¼ tablespoon turmeric
½ tablespoon honey
1 tablespoon orange zest
1 tablespoon lemon juice
fresh
1 tablespoon olive oil, extra-virgin
1 x salt and white pepper
to taste

Directions

Blend all dressing ingredients together in blender adding olive oil a little at a time at end.

Shred carrots in food processor or use a hand grater, which will take a little more time.

Depending on how big they are, it will take about 2 or 3 carrots.

Mix carrots with raisins and pineapple, and toss with desired amount of dressing.

Stir in chopped cilantro.
