This quick and easy quesadillas are loaded with flavor, the cheese is melted beautifully, ozzing out; black bean and corn give the nice flavor and texture. Not only just vegetarians love it, but also a lots of meat lovers go crazy of it!

Directions

Heat oil in a large saucepan over medium heat.

Add onion, stirring, and cook until softened, 2 to 4 minutes.

Add beans, corn, salsa, and pepper flakes, stir well.

Cook until heated through, 3 to 4 minutes.

Melt or heat 1 teaspoon of the butter or oil in a large skillet over medium heat.

Add a tortilla in the skillet, sprinkle cheese evenly on top, then spread some of the bean mixture evenly.

Add another tortilla on top, cook until golden, then flip and cook on the other side.

Melt or heat more butter or oil as needed, and repeat with remaining tortillas and filling until all the ingredients have been used up.

Serve warm.
