Directions

Combine first 8 ingredients in a food processor and process until smooth. Taste for seasonings and add more herbs or lemon juice if necessary.

Spread mixture on bread, top with cucumber, lettuce and sprouts. Put sandwiches together and slice.

I had this at Arrowmont School of Arts and Crafts this past week and it is delicious. I certainly wish I had the book from which it was adapted - I have a feeling it would become a favorite! Susan
