Delicious Tuna Melt Sandwiches with Swiss Cheese and Apple

Inspired by Cat Caro's recipe, we made a few changes in our version. These deliciously filling sandwiches are also loaded with good-for-you ingredients. Perfect for a quick-fix lunch or dinner.

Ingredients

Tuna salad:
6 ounces tuna, canned
packed in water, well drained and flaked with fork
1 each scallions, spring or green onions
thinly sliced, green and white parts
½ small red onion
minced
1 tablespoon pickled jalapenos
drained, and finely chopped, or as needed

1 small celery stalks
finely chopped

½ small apples
fuji or gala, peeled and cored, and diced into small cubes

Cilantro dijon dressing:
1 teaspoon cilantro
freshly chopped
*
1 ½ tablespoons olive oil, extra-virgin
1 tablespoon mayonnaise
1 x salt and black pepper
to taste

½ tablespoon lime juice
½ teaspoon dijon mustard
½ tablespoon white wine vinegar
To serve:
4 slices whole wheat bread
toasted

4 slices swiss cheese
2 slices tomatoes
vine-ripe, 1/2-inch thick
*
2 each pickles, dill
1 x tortilla chips
optional

Directions

In a medium bowl, add all the tuna salad ingredients.

In a small bowl, whisk together all the dressing ingredients until well combined.

Season to taste with salt and black pepper.

Pour the dressing over the tuna salad, and gently toss until evenly mixed.

To assemble the sandwiches:

Arrange a slice of Swiss cheese on top of two slices of bread.

Toast the bread until the cheese melts. Watch carefully, do not burn the bread.

Arrange equal amount of tuna salad over the melted cheese.

Place a slice of tomato over tuna salad, then top with remaining slice of bread.

Serve with dilled pickles and tortilla chips if needed.
