If you love the bright, punchy flavors of Mexican cooking, this chicken is calling your name.

A whole bunch of fresh cilantro gets blended with tomatoes, green pepper, and a yellow chili into a vibrant green sauce that’s got serious kick. The chicken marinates first in oregano, garlic salt, and red wine vinegar, building layers of flavor before it ever hits the pan.

Then everything simmers low and slow until the meat is fall-off-the-bone tender and the sauce has thickened into something you’ll want to spoon over rice, tortillas, or honestly just eat straight from the pot.

Pro Tips

  • Use the full bunch of cilantro, stems and all, for a more robust sauce with deeper herbal flavor
  • Marinate the chicken for at least 30 minutes, or overnight in the fridge for even bolder taste
  • Adjust the heat by swapping the yellow chili for a milder pepper or adding a second one if you like it fiery
  • Serve over white rice or with warm corn tortillas to soak up every last drop of that green gold
