Beat eggs with oil, apple juice, and vanilla, then fold in apples, chocolate chips, and pecans.
The batter is thick and chunky, and it bakes up into something between a cake and a brownie, dense with fruit and chocolate.

In mixing bowl, beat eggs slightly; add oil, apple juice and vanilla.
In separate bowl, combine flour, sugar, salt, baking soda and cinnamon; stir into egg mixture until well blended.
Fold in apples, chocolate chips and pecans. Pour into greased and floured 9 inch square baking pan.
Bake at 350℉ (180℃) for 40 to 45 minutes or until cake starts to pull away from sides of pan. Cool.
Sprinkle with confectioners sugar or serve with dollop of whipped cream if desired.
