This apple snacking cake is the definition of unfussy baking, perfect for when you need something sweet without a production.

Beat eggs with oil, apple juice, and vanilla, then fold in apples, chocolate chips, and pecans.

The batter is thick and chunky, and it bakes up into something between a cake and a brownie, dense with fruit and chocolate.

Kitchen Tips

  • Fold in the apples, chocolate chips, and pecans gently so you don’t deflate the batter
  • The cake is done when it starts to pull away from the sides of the pan
  • Serve with a dollop of whipped cream if you want to dress it up, or just dust with powdered sugar for simplicity
