Rich Pumpkin Bread or Muffins

Make a bunch of these buttery and moist pumpkin bread or muffins for Thanksgiving. Cream adds extra richness. Honey, molasses and vanilla with all the spices make the bread taste incredibly flavorful and tasty. They are also wonderful gifts for you to give away.













Trans-fat Free, Low Sodium


3 ½ cups pumpkin
1 cup butter
2 large eggs
2 ½ cups all-purpose flour
2 ½ cups cake flour
6 teaspoons baking powder
¼ cup molasses
1 teaspoon cloves
2 teaspoons nutmeg
2 cups walnuts
chopped, or half walnut, and half raisins, optional
2 cups honey
1 cup cream
4 tablespoons vanilla extract


Combine pumpkin, butter, and eggs.

Add remaining ingredients and nuts and/or raisins if using, and stir.

Pour into oiled loaf pans or muffin tins.

Bake at 350℉ (180℃) for 30 minutes or until tops brown.

To give as gifts, bake in oiled empty coffee or tea tins.
