Ingredients

1 cup sugar
1 ⅔ cup all-purpose flour
¼ teaspoon baking powder

1 teaspoon baking soda
¾ teaspoons salt
½ teaspoon cloves
ground
½ teaspoon nutmeg
½ teaspoon cinnamon
½ cup vegetable oil
½ cup water
1 cup pumpkin
mashed
2 large eggs
½ cup nuts
optional

Directions

Preheat oven to 350℉ (180℃).

Grease and flour a loaf pan.

Sift together the flour, sugar, baking powder, baking soda, salt, ground cloves, cinnamon and nutmeg into a large bowl.

Add the remaining ingredients and mix until just combined.

Pour the batter into the prepared loaf pan.

Bake for one hour.

Cool for 10 minutes and remove from pan and let cool on a wire rack.

I used less pumpkin puree, a combination of white and lt. brown sugars, increased the spice amounts a little and added 1/3 cup of orange-flavored dried cranberries along with the chopped walnuts. Excellent, moist and earthy. I usually spread a little whipped cream cheese on the sliced bread.

I reduced the sugar, noticed the batter was a bit wet so added an extra 1/2 cup of flour and it turned out splendid. The whole house smelled great while baking, I could even smell the warm spices outside the house. Bake this before company comes over!

This is more of a cake than a bread, but it's still good. I added twice as much pumpkin, since the flavor was a little overwhelmed by the spices, and left out the cloves. I also baked 1hr 30 min at 325, and it came out much fluffier.
