40 minThis is the kind of shrimp marinade that turns the simplest grilled seafood into something restaurant-worthy. Fresh orange juice and zest deliver bright citrus acid, garlic and rosemary provide the savory backbone, and a single tablespoon of olive oil binds everything just enough to coat the shrimp without weighing them down.
Watch the marinating time. The orange juice’s acidity starts to denature the shrimp protein after about 90 minutes, turning the texture mealy and pre-"cooked” like ceviche. One hour is the sweet spot for full flavor penetration without compromising texture.
Grilling over low coals or under the broiler at 4 inches takes just 4 to 5 minutes total. Shrimp curl into a C shape when properly cooked; a tight O means they’re overdone. Turn once at the halfway point for the cleanest grill marks and even color on both sides.
Pro Tips
- Keep the tail shells on while grilling. They protect the meat and make great handles for picking up.
- Thread shrimp onto skewers in pairs (one through the head, one through the tail) so they don’t spin when you flip them.
- Soak wooden skewers for 30 minutes first or they’ll char and break on the grill.
