Easy Shrimp Scampi
Quick and easy rendition of a classic. Serve these garlicky marinated shrimp over or tossed with your favorite pasta.
Ingredients

shrimp
large, peeled & deveined, cut through back to halve |

butter, unsalted

garlic
large, minced |

1 | tablespoon |
lemon juice
freshly squeezed |

2 | each |
italian plum (roma) tomatoes
seeded and diced |

2 | tablespoons |
italian parsley
finely chopped |
|
½ | teaspoon |
oregano
dried, crushed |

black pepper
freshly cracked |

angel hair pasta
or linguine, hot, cooked |
Directions
Place the cleaned and halved shrimp in a bowl and add all remaining ingredients except the salt and pasta. Marinate in the refrigerator at least 2 hours and up to 4 hours, stirring the shrimp at least twice during the marinating.
Remove shrimp in marinade from refrigerator and add the salt; toss.
Heat large skillet over medium and add the shrimp with the marinade. Sauté until shrimp turn pink; add the butter. Toss in the cooked pasta. Serve immediately.
