70 minThis apple cake hides 2 cups of chopped apples inside a moist cinnamon batter, then gets topped with a crumbly mix of brown sugar, chopped nuts, and mini chocolate chips that melt and toast into a crunchy, candy-like crust during baking.
The batter uses both white and brown sugar, which gives the cake a deeper, more caramel-forward sweetness than white sugar alone. Creaming the sugars with butter until light builds air into the batter, and the eggs beaten in add structure and richness. The dry ingredients get sifted together and added alternately with milk for a smooth, even crumb.
Folding in the chopped apples is the last step before the pan. They release moisture as they bake, keeping the cake incredibly moist for days. Use a firm apple like Granny Smith or Honeycrisp that holds its shape during the long bake. Soft varieties dissolve into the batter and leave empty pockets.
The topping is just three ingredients stirred together and sprinkled on raw. The brown sugar melts, the nuts toast, and the mini chocolate chips soften without fully melting, creating a textured crust with pockets of gooey chocolate against crunchy, caramelized sugar.
Kitchen Tips
- Peel and chop the apples into small, uniform pieces so they distribute evenly through the batter
- Mini chocolate chips work better than standard-size in the topping. They spread more evenly and don’t sink
- Test for doneness with a toothpick at 45 minutes. The apples add moisture, so the center can take longer to set
- This cake is even better the next day once the apple moisture has fully distributed through the crumb
