Homemade Oreo cheesecake with a chocolate wafer crust, a rich cream cheese filling lightened with whipped cream, and chopped Oreos folded through every slice. Baked in a springform for true cookies-and-cream decadence.

This is cookies-and-cream in its richest form: a dense, baked cheesecake studded with chunks of chopped Oreo from top to bottom, sitting on a chocolate wafer crust.

A couple of tricks set the texture. A spoonful of flour plus a generous amount of sour cream keeps the filling creamy and helps guard against cracks. Folding in whipped cream at the end lightens the batter so it’s dense without turning heavy.

Soften the cream cheese fully before you start, and add the eggs one at a time, beating slowly. Overbeating whips in air that puffs up and then sinks, leaving cracks across the top.

The long, slow cool is the real test of patience. Let the cheesecake rest on a rack for several hours, then chill it completely before unmolding. Rush it and you get a filling that hasn’t set and a slice that slumps.

Pro Tips

  • Bring the cream cheese to room temperature first so it beats smooth without lumps.
  • Add the eggs one at a time on low speed; too much air is the main cause of a cracked cheesecake.
  • Toss the chopped Oreos in a little flour before folding so they stay suspended instead of sinking to the bottom.
  • Chill the cheesecake fully, ideally overnight, before slicing for clean, set pieces.

Directions

Preheat oven to 350℉ (180℃) Fahrenheit.

Combine cookie crumbs, brown sugar and cinnamon in a small bowl.

Melt butter and slowly mix together with other crust ingredients.

Spray 9” spring form pan. Press the crust into the bottom of the spring form pan.

Place in oven for 6 minutes. When finished set aside on heat rack.

To begin making the filling of the cheesecake using a hand-mixer and a larger bowl, mix together cream cheese and sugar until smooth.

Next add the eggs one at a time and slowly. Following with sour cream, vanilla and flour until smooth. Afterwards fold in the heavy whipped cream.

Coarsely chop 36 Oreo cookies and mix together with the homemade Oreo cheesecake mix.

Pour mixture into spring form pan over crust.

Place in oven on second level for an hour and a half.

Once finished baking let stand on heat rack from 4 – 6 hours.

When cake is competely cooled off remove from spring form pan.

Use topping ingredients to decorate at your own choosing, but have fun with it!!

They have ore cheesecake at pizza nova new York sytle oreo cheese cake but at pizza nova they cook in 20 mintues for 5.00$
