This delicious and easy chicken-broccoli pie is a great way to incorporate some veggies into the meal. Kids won't say a word about the additional broccoli, because it tastes so yummy.

Ingredients

3 cups cheddar cheese
shredded
1 ½ cups chicken
cooked, cut up
cup onions
finely chopped
10 ounces broccoli florets
thawed and, drained
1 ⅓ cups milk
3 large eggs
¾ cup biscuit baking mix (bisquick)

¼ teaspoon black pepper

teaspoon thyme
dried

Directions

Heat oven to 400℉ (200℃).

Mix 2 cups of the cheese, chicken, onion and broccoli in greased pie plate, 10 x 1½ inches.

Beat remaining ingredients except cheese with wire whisk or hand beater until almost smooth, about 1 minute.

Pour into plate. Bake until knife inserted in center comes out clean, 25 to 30 minutes. Top with remaining cheese.

Bake just until melted, 1 or 2 minutes. Cool 5 minutes.

Browned onions with garlic in a hot skillet with a bit olive oil, which really made the pie taste much more flavorful. Made the bisquick baking mix from the scratch, this chicken-broccoli pie tasted heavenly delicious.

So easy to make, and a great week-day dinner.
