Apple Dapple Cake

Dense tube cake loaded with apples, coconut, and pecans. Bake 90 minutes, then soak with hot buttery brown sugar topping poured over.

120 minThis cake earns its dapple name from coconut and pecans scattered through the apple-studded batter. The oil base makes it incredibly moist.
The cake bakes for a full hour and a half. While it’s in the oven, make a brown sugar, butter, and milk mixture that boils for 2 minutes.
Pour the hot topping over the hot cake. It soaks in, creating a sweet glaze.
Baking Tips
- Beat oil and sugar until very stiff
- Stir in apples, coconut, and pecans by hand
- Pour topping immediately over hot cake

Heat oven to 325℉ (160℃). Grease a tube pan. Mix oil & sugar in lg mixing bowl. Add eggs, flour, soda, vanilla, & salt. Beat with electric mixer until well blended & mixture is stiff. Stir in apples, coconuts, & pecans. Spoon into cake pan, bake for 1½ hrs.
Topping: Mix all ingredients well. Bring to a boil for 2 min. Pour over hot cake.
