Directions

Heat oil in a dutch oven, over a moderately-high flame.

Add onions, bell peppers, and garlic.

Heat and stir for 3 to 4 minutes.

Add turkey or chicken, heat and stir for 8 to 10 minutes.

Stir in tomato concasse, beans, tomato sauce, soy, and spices.

Bring to a boil.

Reduce heat, cover, and simmer for 1 to 2 hours.

Serve hot, garnished with minced scallions.
