20 minFive minutes in the microwave. That’s all it takes to go from raw ingredients to a loaded, cheesy quiche packed with hash browns, sausage, and a good kick of picante sauce. No crust to fuss with, no preheating the oven, no waiting around.
The hash browns act as the base layer here, giving you that starchy, satisfying bite that a traditional pie crust would normally provide. They soak up the melted margarine and crisp slightly around the edges as the eggs set, creating pockets of golden potato throughout.
Two cheeses work together in this one. Cheddar brings sharp flavor and mozzarella adds that stretchy, gooey pull when you scoop out a serving. The picante sauce runs through the whole thing, so every bite has a little heat and tang from the tomatoes and peppers.
Check the center with a knife at the five-minute mark. Microwaves vary, so yours might need another minute or two. You want the center just set, not rubbery. It’ll carry over and firm up as it rests.
Chef Tips
- Use thawed, squeezed-dry hash browns; excess moisture makes the eggs watery
- Let the quiche rest 2 minutes after microwaving so the center finishes setting
- Adjust the picante sauce heat level to your preference; mild for kids, hot for a real wake-up call
- A microwave-safe glass dish works best for even cooking
Variations
- Bacon swap: Use crumbled bacon instead of sausage for a smokier flavor
- Veggie version: Skip the sausage and add diced bell peppers and spinach
- Pepper jack heat: Replace the mozzarella with pepper jack cheese for double the spice
