Creamy Chicken Parmesan with Spinach


A succulent chicken dish made with parmesan cheese, fresh spinach and pimentos.













Low Fat, Low Cholesterol, Trans-fat Free, Low Carb, Low Sodium


cup Parmesan cheese
¼ teaspoon italian seasoning
3 each chicken breasts
¼ cup scallions, spring or green onions
1 teaspoon margarine
1 teaspoon all-purpose flour
½ cup milk
5 ounces spinach
frozen **
1 teaspoon pimentos


  • chicken breast, (about 2¼ pounds total), skinned, boned, and halved lengthwise.

213mg Sodium, 361mg Potassium In a small mixing bowl combine cheese and Italain seasoning. Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside.

ARRANGE pieces in an 8x8x2-inch baking dish. In a small saucepan cook onion in hot margarine until tender. Stir in flour; add milk all at once.

Cook and stir until bubbly; stir in drained spinach and pimiento. Spoon spinach mixture over chicken; sprinkle with remaining cheese mixture.

Bake, uncovered, in a 350℉ (180℃) oven for 30 to 35 minutes or until tender.
