Baking Pan and Dish Volume Guide

 

Refer to this chart when you don't have the exact baking dish or pan size needed called for in a recipe or when you want to adjust the shape of the baked good.

 

This handy chart provides some of the most commonly used baking dishes and pans and their volumes.

Refer to this chart when you don't have the exact baking dish or pan size needed called for in a recipe or when you want to adjust the shape of the baked good.

Always try to choose a baking dish or pan that has the same volume that's called for in the recipe you are making. The depth of the baking vessel can vary but a dramatic difference can cause issues. Too shallow a depth and the mixture may overflow. If the baking pan is too deep pastries may not brown properly or the sides of a cake make end up higher than the center.

This is really helpful! If the size you're looking for isn't here, you can always measure yourself by simply testing how many cups of water it takes to fill your pan/ dish.

Your chart doesn’t show you the volume of a 11”x1” fluted tart pan, which is the only tart pan I could find. The recipe calls for a 9”x1” fluted tart pan.

Hi, I found a couple of typos so I thought I'd share them. I'll put corrections in bold. I tried to cut and paste the paragraph on google doc, then put it here all corrected. That didn't work. Nor can I make anything bold here. So, I just put corrections in parentheses.
Always try to choose a baking dish or pan that has the same volume that's called for in the recipe you are making. The depth of the baking vessel can vary, but a dramatic difference can cause issues. Too shallow a depth and the mixture may overflow. If the baking pan is too deep,(add comma after deep) pastries may not brown properly. (period added) (New sentence follows) Additionally, the sides of a cake may end up higher than the center.

I notice that you put the volume of an 8x3 springform pan as 10 cups and an 8x2 as 6 cups. A 1” difference in height is a 4 cup difference? I find that hard to believe.

Fat Daddio 13”x4”x1” removable bottom tart pan. For the love of god does ANYONE have a conversion? Not even the 4 page Fat Daddio’s Batter Capacity Chart includes this pan. It’s a brand new bake for me and I’m creating the recipe inspired by others so I can’t just say oh, 4 cups! I’ve also got three different layers baking at separate times. It can NOT be this hard.

Excellent article! The photos are very helpful. I read 6 different google blurbs about how big a 9" pan is supposed to be. Not one explanation matched the other but your 4 cups matched one explanation. Your thoroughness on the subject of pie/cake plates/pans surpasses all. Thank you.
