30 minThis is weeknight comfort cooking at its most practical. A quick white sauce brings together crab, green peas, and sliced hard-boiled eggs with a squeeze of lemon, all baked under a layer of buttered breadcrumbs.
It’s the kind of casserole your grandmother might have pulled out of the oven on a Wednesday night, and everyone at the table cleaned their plate without a word of complaint.
Thirty minutes, one dish, and a garnish of egg slices and lemon rounds to make it look like you tried harder than you did.
Kitchen Tips
- Stir the milk in slowly to avoid lumps in the white sauce. A smooth roux is the foundation here, so take your time adding the milk a splash at a time.
- Use day-old bread for the crumb topping. It crisps up better in the oven than fresh breadcrumbs, which can turn chewy.
- A squeeze of fresh lemon juice brightens everything and keeps the creamy sauce from feeling heavy.
