30 minMolded cheese treats are exactly what they sound like: melted cheddar poured into candy molds and chilled until firm. One ingredient, no tools beyond a microwave, and you end up with bite-sized cheese pops shaped like stars, hearts, snowflakes, or anything else the mold gives you.
Grate the cheese coarsely instead of cutting it in chunks. Smaller pieces melt evenly without the cheese seizing or oiling out. Use medium microwave power, not high, and check at the one-minute mark. Cheddar can go from melty to broken and greasy in 30 seconds if pushed too hot.
Work fast once it melts. Pour straight from the measuring cup into silicone molds, slide in lollipop sticks if you want them on a stick, then refrigerate. Twenty minutes is usually enough for them to release cleanly when you flex the mold.
Pro Tips
- Silicone molds release cleanly. Hard plastic molds need a quick spray of neutral oil first or the cheese sticks.
- Real block cheddar melts better than pre-shredded, which is dusted with starch and turns gummy instead of smooth.
- Serve cold straight from the fridge. They soften fast at room temperature and lose their shape on a warm platter.
Variations
- Swap in pepper jack or smoked gouda for a different flavor with the same melt behavior.
- Press a sliver of pepperoni or a piece of olive into the mold before pouring for a hidden surprise.
- Roll the warm finished pops in everything bagel seasoning or chopped chives for a savory coating.
