Cooked chicken, rice, cheddar cheese, and vegetables baked together into a hearty loaf. A simple one-dish comfort meal that uses leftover chicken or turkey.

Got leftover chicken or turkey sitting in the fridge? This is exactly what to do with it.

Everything goes into one bowl: cooked chicken, raw rice, grated cheddar, carrots, onion, bell pepper, and milk. Mix it up, pour it into a baking dish, and let the oven do the rest. The rice cooks right in the dish as it bakes, soaking up all that cheesy, savory liquid.

It’s the kind of no-fuss casserole-style loaf that feeds four without any drama. Great for clearing out the fridge after a holiday roast.

Pro Tips

  • Use cooked chicken or turkey, either works equally well here. It’s a great way to repurpose Thanksgiving leftovers.
  • Grate the carrots and onion rather than chopping them. They’ll blend into the loaf and cook more evenly.
  • Sharp cheddar gives you more flavor punch than mild. The cheese melts through the rice and acts as a binder.
