A refreshing summer salad that is made with fresh and seasonal vegetables and berries. Low in fat and calorie, but packed with goodness. Feel free to use blueberries, raspberries, or a combination of all three.

Ingredients

2 tablespoons red wine vinegar
1 tablespoon maple syrup
pure, or you can use sugar or brown sugar
1 ½ tablespoons olive oil, extra-virgin
¼ teaspoon salt
or to taste
black pepper
freshly ground to taste

6 cups baby spinach

12 ounces strawberries
freshly sliced, about 2 1/2 cups
cup scallions, spring or green onions
sliced, green part only
½ cup walnuts
chopped and toasted

Directions

Whisk maple syrup (or brown sugar), vinegar, oil, salt and pepper in a large bowl. Add spinach, strawberries and green onions, toss to coat.

Divide the salad among 4 plates and top with toasted walnuts. Serve.

This salad is really good. The sweetness of the strawberries matches perfectly with the tangy dressing and the bits of toasted walnuts bring it to the next level. This is an easy to prepare salad that is impressive to serve to company.
