Apple Raisin Quick Bread

 

This spicy harvest bread is full of plump raisins and tart apples, then topped with nuts for a delicious crunch.

Ingredients

½ cup vegetable oil
plus 2 teaspoons
2 large eggs
2 teaspoon vanilla extract
1 ½ cups all-purpose flour
½ cup brown sugar

½ cup sugar
1 teaspoon cinnamon
¾ teaspoon salt
¾ teaspoon baking soda
½ teaspoon cloves
ground
¼ teaspoon baking powder

1 ½ cups apples
peeled tart, diced

cup raisins, seedless
¼ cup nuts
coated in 1-2 tablespoons flour, chopped

Directions

Preheat oven to 325 degree.

Grease and flour a 9x5-inch loaf pan.

Beat oil, eggs, and vanilla together.

In a separate bowl, combine flour, sugars, cinnamon, salt, baking soda, cloves, and baking powder; beat into the egg mixture.

Stir in apples and raisins.

Pour into prepared loaf pan.

Sprinkle flour-coated nuts over batter.

Bake for 60 to 70 minutes or until a toothpick inserted near the center comes out clean.

Cool for 10 minutes before removing bread from the pan.

Cool completely on a wire rack.
