Apple Black Walnut Cake

Chunks of apples and pieces of walnuts make this cake super moist yet delicious.













Trans-fat Free, Low Sodium


1 cup sugar
¾ cup vegetable oil
2 large eggs
cups flour, all-purpose
1 cup walnuts
1 teaspoon baking soda
1 dash salt
1 teaspoon vanilla extract
2 cups apples
chopped, unpeeled
4 tablespoons butter
1 teaspoon vanilla extract
½ pound powdered sugar

Preheat oven to 350℉ (180℃).

Mix sugar and oil.

Add eggs, beat until fluffy.

Sift dry ingredients together and add to sugar, oil, and egg mixture.

Blend in vanilla.

Fold in black walnuts and chopped apples.

Pour into a well greased and floured loaf pan.

Bake for 40 minutes or until a wooden stick inserted centre comes out almost clean.

Let cake cool in pan on wire rack for about 30 minutes.

Remove cake from pan onto wire rack and cool completely.

To make icing:

Soften butter and blend with powdered sugar.

Add vanilla.

Add a little cream or milk to blend to a spreadable consistency.

Spread or drizzle on cooled cake.

Let icing set completely, 30 minutes to 1 hour.

Slice and serve.

The leftover can be kept in a zip-lock bag or air-tight container in frige for 1 week or frozen for up to 1 month.

Absolutely delicious. Chunks of fresh apples and pieces of walnuts made the cake super moist and tasty. It was so easy to make, I also added 1/2 cup chocolate chips and reduced the sugar to 1/2 cup. The cake itself was delicious enough. I cut down the amount of icing, only used 1/2, and added some cocoa powder to make a chocolate icing (Chocolate is something that I want to put into any dessert). Overall a definite 5-star cake no doubt.
