The batter uses egg whites instead of whole eggs and skim milk soured with lemon juice to mimic buttermilk. That homemade buttermilk reacts with the baking soda to give the muffins lift, since there’s no baking powder in the mix.
Whole wheat flour and unprocessed bran make up the dry base, giving each muffin a hearty, nutty chew with serious fiber content. A touch of cinnamon and nutmeg rounds off the earthiness of the bran without masking it.
The most important rule: stir just until the dry ingredients are moistened. Overmixing develops the gluten and turns these into tough little hockey pucks instead of tender muffins.

Directions
Preheat oven to 350℉ (180℃).
Combine milk oil, egg, sugar, prunes, and applesauce with fork in bowl.
Set aside.
Combine dry ingredients.
Add liquid ingredients to dry.
Stir just to moisten .
Grease 12 muffin cups or use paper cups.
Bake 25 minutes.
Let cook 5 minutes, and remove from pan.
