Browned turkey sausage and sautéed onion line the bottom of a pie crust, then get blanketed in a smooth custard of eggs, skim milk, shredded Swiss cheese, and a whisper of nutmeg. A sprinkle of paprika on top gives it that warm, golden glow.
Let it rest 10 minutes after baking so every slice holds together in a clean, custardy wedge.
Chef Tips
- Cut the sausage into small, bite-sized pieces so every slice gets some
- The flour dusted over the sausage helps absorb grease and thicken the custard slightly
- Use a deep-dish pie shell for this generous filling
- Pair with a simple green salad dressed in vinaigrette for a complete meal
Variations
- Swap Swiss for Gruyere for an even nuttier, more melty cheese
- Add a handful of fresh spinach or roasted red peppers
- Use Italian turkey sausage for a herb-forward flavor
