My Kentucky Derby Chocolate Pie
No special occasion needed for this decadent dessert...it's so easy.
large, or 2 jumbo eggs
or vegetable oil, something neutral tasting
brown sugar, light
or baking margarine, softened
or walnuts, chopped
chocolate chips (semi-sweet)
pie shell (9 inch)
heavy whipping cream
whipped and sweetened, or vanilla ice cream (optional)
Hershey's or other, warmed (optional)
Preheat oven to 325℉ (160℃) degrees.
In a large bowl, beat the eggs on high speed until foamy, about 3 minutes. Beat in vanilla and oil just until incorporated. Beat in flour and both sugars until well blended. Beat in softened butter. Stir in nuts and chocolate chips. Pour into the unbaked pie shell and smooth top.
Bake on middle rack of oven for 1 hour to 1 hour 10 min. or until knife inserted halfway between edge and center comes out clean and top is golden brown (watch browning of crust---may need to cover edges with foil if browning too quickly). Cool on wire rack.
Serve warm or at room temperature with warm chocolate syrup and whipped cream or vanilla ice cream, if desired.
