This is a clever kid-friendly weeknight pizza alternative that swaps the yeast crust for a layer of frozen french fries baked into a single crispy potato base. The kids think they are getting two of their favorite foods in one. The grown-ups appreciate a hot dinner with 10 minutes of prep.

The technique is straightforward but works because of order of operations. The frozen fries get a 10-minute head-start in a 450°F (230°C) oven to crisp up before any sauce hits them. Skip this step and the fries stay soggy under the moisture from the sauce and cheese.

Once the fries are partly cooked, pizza sauce goes on, followed by dried oregano (for that pizza-parlor aroma), thin strips of green bell pepper, sliced scallions, and a generous topping of mozzarella with Parmesan for sharp savory finish. Back in the oven for 15 minutes until the cheese melts and lightly browns.

Serve in wedges or squares straight from the pan. Pair with a salad for grown-ups, ketchup for the kids if that is what they want.

Directions

Heat oven to 450 degrees.

Coat 12-inch round pizza pan with vegetable cooking spray.

Arrange frozen potatoes evenly in one layer in pan.

Bake 10 minutes. Remove pan from oven and cover potatoes with sauce.

Sprinkle with oregano. Arrange pepper strips on sauce; sprinkle with onions and top with cheeses.

Bake about 15 minutes until top is lightly browned.
