Ingredients

¾ pound ground beef
2 ½ cups milk
1 cup cornmeal
2 large eggs
beaten
1 package chili seasoning mix

1 teaspoon garlic salt
14 ½ ounces tomatoes
cut up
8 ounces corn kernels, canned
2 ¼ ounces olives
ripe, drained, sliced
1 ½ cups cheddar cheese
shredded
2 tablespoons cornmeal

Directions

In medium skillet, brown ground beef; drain.

In medium bowl, combine milk, 1 cup cornmeal and eggs; blend well.

Add ground beef and remaining ingredients except cheese and 2 tablespoons cornmeal; stir to mix.

Pour into 12x8 inch, lightly greased baking dish.

Bake in 350℉ (180℃) oven 35 to 40 minutes.

Sprinkle with cheese and 2 tablespoons cornmeal; continue baking until cheese melts.

Let stand 10 minutes before serving.

If you like tamales you'll like this savoury pie/casserole. Was surprised at how much it made. This recipe is a great thrifty way to stretch 3/4 pound of beef mince into 6 solid servings of tasty goodness. I added some homemade chili seasoning mix to the ground beef while browning. I left out the garlic salt as I felt the seasoning mix already contained enough salt. And we used canned Italian tomatoes with no salt added. The result was perfectly seasoned throughout. YMMV, depending on the ingredients used.

Better than any vendor tamale that I've ever had.

Easy to make, but not as great as we hoped. 2 out of 5 in my family wouldn't eat it. I thought it was pretty good with salsa dumped over it but probably wouldn't make it again.

Made this for a company potluck. Browned the meat at home, mixed the dry ingredients and added them to the browned meat. Combined the meat mixture with the milk/egg and corn meal at work and plugged in the crock pot. Four hours later we celebrated birthdays. The crock pot was scrapped clean. Best rating I could have gotten. Everyone raved at how godd it was.
